There's a timeless Chinese proverb that says there are seven essentials to family life: firewood, rice, oil, salt, soy sauce, vinegar, and tea. In traditional villages, tea was brewed with care and respect. A clay teapot was filled one-third with tea leaves, fresh spring water heated to about 160 degrees was poured over the leaves and immediately poured off, washing and opening the leaves. The pot was refilled, and the tea steeped for 3-5 minutes, creating a perfect infusion that was then served in small porcelain cups. If another cup was needed, more hot water was added to the pot, and the process continued.
